Last year, Chef Elis Marchetti’s Food Truck at Laghetti del Passetto was introduced to the city with high expectations and plenty of novelties. All of them were thoroughly met: with the arrival of warmer days, Chef Marchetti and his Truck are back. The idea that led him to win the municipal tender is the same one he has pursued his entire life: to showcase the excellence of the Marche region in every form, even in a “street food style.”
Hailing from Ancona and born in 1982, Elis Marchetti has taken this vision everywhere: from his television debut on La Prova del Cuoco to appearances on Rai 2, Vera TV, Linea Verde, and Linea Blu. Today, in addition to running the Food Truck at Laghetti del Passetto, he has embraced a new challenge as Chef Patron of the historic Villa Amalia restaurant in Falconara.
“Over the years, I have received countless compliments,” says the Chef. “One of the most meaningful, however, came from a Grottarolo at Passetto. After observing our work for a long time, he stopped me to say that even he could never have imagined such a wonderful initiative.”
The Truck’s gastronomic offerings are divided into two aperitif menus: one designed for the city of Ancona and one dedicated to the Passetto, a unique place suspended between land and sea. Both feature eight finger food courses, designed to take guests on a journey through the Marche region: from Colfiorito potatoes with Marche saffron and ciauscolo, to tuna bresaola prepared by the Chef with zucchini cream flavored with fennel. “We have outstanding local products just a stone’s throw from home,” Marchetti reminds us, “let’s give them the value they deserve.”
Accompanying the culinary journey is an exceptional wine list: from wines crafted by Elis Marchetti to some of the best local labels, including Verdicchio, Pecorino, and of course, Rosso Conero. Beer lovers can enjoy products from the Renton craft brewery in Fano, a young and dynamic reality, just like the design of their cans. For those seeking non-alcoholic alternatives, there are Marche fruit juices from Fresco, a Montalto-based company with a patent that ensures natural preservation without chemical additives.
And the Mosciolo? “Last year we had a dedicated finger food for it, but this year,” Marchetti explains, “we decided to respect the timing of nature. Those who know me know I love the sea, and loving it also means respecting its rhythms.”
